GREEK CUCUMBER SALAD

A great cucumber salad recipe to try...and this is a cool and refreshing salad, popular in Greece where there are many hot days.

INGREDIENTS
DRESSING:

• 1 c. yogurt or sour cream
• 1 tsp. vinegar
• 1 tsp. spearmint flakes
• 1 tsp. scallions, chopped
• 1/2 tsp. sugar
• Salt and pepper to taste

INSTRUCTIONS
Mix cucumbers in sauce and serve chilled. And the cucumber salad recipe is ready to serve...enjoy !

CUCUMBER SALAD RING

CUCUMBER SALAD RING...a great cucumber salad recipe to try ! Nice !

INGREDIENTS

• 1 pkg. lime Jello
• 1 c. salad dressing
• 2 tbsp. lemon juice
• 1/4 c. finely cut green onions, tops included
• 3/4 c. hot water
• 1 tbsp. prepared horseradish
• 3/4 c. drained, shredded cucumbers
• 2 (3 oz.) pkg. cream cheese
• 1/4 tsp. salt

INSTRUCTIONS
Dissolve gelatin in hot water. Add cheese, salad dressing, horseradish and salt. Beat until smooth. Add lemon juice. Chill until partially set. Stir in cucumbers and onion. Pour into mold to set.
Double recipe for a large mold and you may fill center with salmon or tuna salad for a festive luncheon dish. The cucumber salad recipe is ready to serve....nice one !

INGREDIENTS

• 1 box (3 oz.) lemon Jello
• 1 1/2 c. hot water
• 1 tbsp. vinegar
• Dash salt
• 1 cucumber, chopped
• 1 tbsp. onion, minced
• 1/2 c. salad dressing

INSTRUCTIONS
Dissolve Jello in hot water. Add vinegar and salt. Chill, not until firm. Peel and chop cucumber and onion. Whip Jello until frothy. Add salad dressing, stir in cucumber and onion. Chill until set.

INGREDIENTS

• 1/2 c. plain yogurt or salad dressing
• 1/2 tsp. salt
• 1/4 tsp. dried dill weed
• 1/8 tsp. pepper
• 2 med. cucumbers, thinly sliced
• 1 sm. onion, thinly sliced & separated into rings

INSTRUCTIONS
Mix all ingredients. Cover and refrigerate at least 4 hours. The cucumber salad recipe is ready to serve. Great one ! Enjoy this starters !

CARROT - CUCUMBER SALAD

CARROT - CUCUMBER SALAD ...another nice cucumber salad recipe ! Great !

INGREDIENTS

• 2 med. cucumbers
• 3-4 stalks celery
• 3 med. carrots

DRESSING:

• 1 tbsp. vinegar
• 1 tbsp. Dijon-style mustard
• 3 tbsp. salad oil
• 1 tsp. dried tarragon leaves

INSTRUCTIONS
Wash the cucumbers and peel if peel is hard and waxy. Wash and trim the celery. Cut all the vegetables into julienne strips. Combine in a salad bowl, mixing well.
For the dressing, blend the vinegar and mustard in a mixing bowl. Add oil in a slow but steady stream; blend well. Add the tarragon. Pour the dressing over the salad. Sprinkle with some extra tarragon. Cover and chill 30 minutes. Toss gently but thoroughly just before serving. The cucumber salad recipe is ready to serve ! Enjoy !
