ORANGE CUCUMBER SALAD...try this amazing cucumber salad recipe...with orange. Nice combinations !
Romaine lettuce is a good base for this refreshing salad.
INGREDIENTS
- 1/2 tsp. salt
- Dash of pepper
- 4 med. oranges, peeled & sectioned 3/4 c.
- chopped green pepper
- 1/4 c. cut parsley
- 1 c. plain yogurt
- 1/2 tsp. dried thyme, crushed
In a small mixing bowl sprinkle cucumber with salt and pepper; toss with orange sections, green pepper and parsley. Combine yogurt and thyme, spoon onto salad mixture. Toss lightly to coat. Cover and chill. Serve on crisp Romaine or Bibb lettuce, if desired. This great cucumber salad recipe serves 8 persons. Enjoy it !
