Fragrant Cucumber Salad Recipe with Mint and Garlic Chives

Ingredients:

• 2 large English cucumbers OR
• 1 1/2 pound Asian cucumbers
• 1/2 teaspoon salt
• 1/4 cup unseasoned rice wine vinegar
• 3 tablespoons sugar
• 1 tablespoon fresh lime juice
• 2 tablespoons chopped fresh mint
• 1 tablespoon chopped garlic chives
• 1 tablespoon chopped cilantro

Instructions:

Wash cucumbers well. Cut them in half lengthwise then slice into 1/4-inch-thick half-moons. Toss with the salt, place in a strainer over a bowl, and let sit for 1 hour.
In a large bowl, whisk together the vinegar, sugar and lime juice till sugar is dissolved. Drain cucumbers well and add to the bowl. Add herbs and toss all together. Let sit another 30
minutes, refrigerated, before serving.The cucumber salad recipe is ready to serve....

Ingredients:

• 2 cups thinly-sliced chilled cucumbers
• 1/2 teaspoon salt
• 1 cup thinly-sliced fresh onions
• 1/4 cup vinegar
• 1/4 cup water
• 1 tablespoon sugar
• 1/2 teaspoon dill weed
• 1/4 teaspoon black pepper
• 1 dash cayenne

Instructions:

Place cucumber slices in medium-size glass bowl and sprinkle with salt. Stir in onions.
Place remaining ingredients in 2-cup glass measure and beat with fork to combine. Pour over cucumbers and onions and toss lightly. Refrigerate at least 30 minutes. Stir before serving...and the cucumber salad recipe is ready to serve...!!

• 1 c. hot water
• 1/4 c. cold water
• 1 tbsp. vinegar
• 1 tbsp. grated onion
• 1 c. peeled shredded cucumbers, drained
• 1/4 tsp. salt
• 1 c. salad dressing

INSTRUCTIONS
Dissolve Jello in hot water. Add cold water and vinegar. Chill until partially set.
Combine onion, cucumbers and salt. Mix well and drain. Beat gelatin until fluffy; fold in cucumbers and salad dressing. Pour into mold or bowl; set. Chill and unmold. this great cucumber salad recipe makes 8 servings . Nice one. Enjoy it !

• 1 c. plain yogurt
• 1/2 tsp. dried thyme, crushed

INSTRUCTIONS
In a small mixing bowl sprinkle cucumber with salt and pepper; toss with orange sections, green pepper and parsley. Combine yogurt and thyme, spoon onto salad mixture. Toss lightly to coat. INGREDIENTS

• 2 cucumbers
• 1 c. vinegar
• 1/3 c. salad oil
• 1/4 tsp. chili pepper pods, crushed
• 1 tbsp. sugar
• 1/4 c. Indonesian soy sauce
• 1/8 tsp. salt
• 4-6 lettuce leaves
• 4-6 red bell pepper rings

INSTRUCTIONS
Peel and slice cucumbers very thin. Mix together vinegar, oil, pepper pods, sugar, soy sauce and salt until sugar is dissolved. Add cucumber slices and refrigerate at least 2 hours. (Best when made the day before.) Place lettuce leaves on individual plates and arrange cucumbers on lettuce. Garnish with pepper rings. The cucumber salad recipe is ready...enjoy it !
