VIRGINIA'S CUCUMBER SALAD INGREDIENTS ... a nice cucumber salad recipe to try..great !

• 1 sm. pkg. lime Jello
• 1 c. hot water
• 1/4 c. cold water
• 1 tbsp. vinegar
• 1 tbsp. grated onion
• 1 c. peeled shredded cucumbers, drained
• 1/4 tsp. salt
• 1 c. salad dressing

INSTRUCTIONS
Dissolve Jello in hot water. Add cold water and vinegar. Chill until partially set.
Combine onion, cucumbers and salt. Mix well and drain. Beat gelatin until fluffy; fold in cucumbers and salad dressing. Pour into mold or bowl; set. Chill and unmold. this great cucumber salad recipe makes 8 servings . Nice one. Enjoy it !

INGREDIENTS

• 1/2 tsp. salt
• Dash of pepper
• 4 med. oranges, peeled & sectioned 3/4 c.
• chopped green pepper
• 1/4 c. cut parsley
• 1 c. plain yogurt
• 1/2 tsp. dried thyme, crushed

INSTRUCTIONS
In a small mixing bowl sprinkle cucumber with salt and pepper; toss with orange sections, green pepper and parsley. Combine yogurt and thyme, spoon onto salad mixture. Toss lightly to coat. Cover and chill. Serve on crisp Romaine or Bibb lettuce, if desired. This great cucumber salad recipe serves 8 persons. Enjoy it !

• 1/2 c. vegetable oil
• 1/4 c. fresh lemon juice
• 1 tsp. sugar

• 3 med. cucumbers, thinly sliced
• 6 c. melon
• Crisp salad greens
• (Honeydew, cantaloupe, watermelon - cut in 3/4 inch pieces).

INSTRUCTIONS
Mix oil, lemon juice, sugar, salt and pepper. Toss cucumber slices, melon and oil mixture in bowl; chill. Serve on salad greens. The cucumber salad is ready to serve 12 persons. Nice salad ! Enjoy it !

INGREDIENTS

• 2 cucumbers
• 1 c. vinegar
• 1/3 c. salad oil
• 1/4 tsp. chili pepper pods, crushed
• 1 tbsp. sugar
• 1/4 c. Indonesian soy sauce
• 1/8 tsp. salt
• 4-6 lettuce leaves
• 4-6 red bell pepper rings

INSTRUCTIONS
Peel and slice cucumbers very thin. Mix together vinegar, oil, pepper pods, sugar, soy sauce and salt until sugar is dissolved. Add cucumber slices and refrigerate at least 2 hours. (Best when made the day before.) Place lettuce leaves on individual plates and arrange cucumbers on lettuce. Garnish with pepper rings. The cucumber salad recipe is ready...enjoy it !

• 2 (3 oz.) pkg. cream cheese
• 1/4 tsp. salt

INSTRUCTIONS
Dissolve gelatin in hot water. Add cheese, salad dressing, horseradish and salt. Beat until smooth. Add lemon juice. Chill until partially set. Stir in cucumbers and onion. Pour into mold to set.
Double recipe for a large mold and you may fill center with salmon or tuna salad for a festive luncheon dish. The cucumber salad recipe is ready to serve....nice one !

• 1 1/2 c. hot water
• 1 tbsp. vinegar

INGREDIENTS

• 2 med. cucumbers
• 3-4 stalks celery
• 3 med. carrots

DRESSING:

• 1 tbsp. vinegar
• 1 tbsp. Dijon-style mustard
• 3 tbsp. salad oil
• 1 tsp. dried tarragon leaves

INSTRUCTIONS
Wash the cucumbers and peel if peel is hard and waxy. Wash and trim the celery. Cut all the vegetables into julienne strips. Combine in a salad bowl, mixing well.
For the dressing, blend the vinegar and mustard in a mixing bowl. Add oil in a slow but steady stream; blend well. Add the tarragon. Pour the dressing over the salad. Sprinkle with some extra tarragon. Cover and chill 30 minutes. Toss gently but thoroughly just before serving. The cucumber salad recipe is ready to serve ! Enjoy !
